Wusthof Classic 7" Hollow Santoku

Review:
Retailing anywhere from $100 to $200 for a single Santoku knife, Wusthof has several models to choose from. Most models include the hollowed Granton edge: good for keeping vegetables from sticking to the blade. However, flat-edged cutlery is also available. Select handle features available: triple riveted, dramatic sculpted stainless steel, and lightweight ergonomic handles. Wusthof also sells a 2-knife set containing both a Paring and Santoku knife. Shun Santoku Classic 7"

Review:
The Kershaw Santoku Classic with 7" blade is another recommended favorite of Cooks Illustrated Magazine; recommended by Alton Brown

This knife retails for about $143 but you can save money online.
Blade -This santoku is considered to be very sturdy and solid with a good curvilinear blade for rocking. Blade is clad with16 layers of stainless steel producing a rust-free Damascus look. Tip is sharp and decisive. Also available: hollowed granton edged santoku.
